Instock is a zero waste restaurant in Amsterdam that I visited in 2020 for Viertel \ Vor magazine. I met up with social & pr manager Heleen who walked me through this amazing and forward thinking place and explained their unique approach to me.
The restaurant just works with rescued food – so my yummy fish taco for example was made out of a fish that was simply to big for the packaging (yes, that could be a reason to throw them away).
